These cookie cups are the perfect treat - they're quick and easy to make, they're absolutely delicious and you can stuff them with whatever your heart desires! They are also vegan and optionally gluten-free.
Fillings of choice: chocolate, hazelnut spread, peanut butter etc.
Instructions
Preheat oven to 180°C / 350°F / 160°C and grease a muffin tray with some cooking spray.
Add flour, almond meal, chia seeds, baking soda and salt to a mixing bowl. Mix with a spatula until combined.
Add in liquid sweetener and coconut oil and fold until it comes together like a ball of cookie dough. You may have to use your hands.
Divide the cookie dough into four equal portions, place them into your muffin tray, then remove a small piece from each (you will use this later).
Use a spoon to create a well in each cookie (see video) then fill each cup with your fillings. Use the cookie dough you removed earlier to cover the top of your cookie cup.
Bake for 12-15 minutes until golden brown. Leave to cool for a couple of minutes in the tray and then carefully remove.

This recipe makes four cookie cups, however, you can easily double or triple the recipe to make more!You could bake these for a shorter amount of time if you prefer a gooey cookie.Gluten-free? These work well with a gluten-free flour, but I recommend checking your flour to see if it contains xanthan gum, if it does not - please add 1/4 tsp to the dry ingredientsAlmond Meal: also known as Ground Almonds.
