This Feta Chicken Bake takes only five minutes to prepare. It's easy, healthy, and delicious! It's a perfect busy weeknight meal. Simply dump everything in a casserole dish, pop it in the oven, and it's ready!

160gBaby Tomatoes
1tspSmoked Paprika
1tspSalt
60mlMilk¼ cup
60gFeta Cheese
Handful of Spinach

Instructions
Preheat your oven to 400°F (200°C).
Add the chicken, tomatoes, mushrooms, milk, smoked paprika, salt, and minced garlic (if using) to a large casserole dish. Stir until everything is evenly coated.
Place the block of feta in the center of the dish.
Bake uncovered for 30–35 minutes, stirring once halfway through, until the chicken reaches an internal temperature of 165°F (74°C).Cooking times can vary depending on your oven and the size of your chicken pieces. Remove the dish from the oven. Mash the feta with a fork and gently burst the roasted tomatoes. Stir everything together until a creamy sauce forms.
If you'd like a thicker sauce, spoon off a little of the excess tomato juices before mixing.
Stir through the spinach and fresh basil. The residual heat will wilt the spinach perfectly.
Serve immediately with your favorite side. Finish with a squeeze of fresh lemon juice and a sprinkle of extra basil, if desired.
