  • 2 Boneless Skinless Chicken Breasts
  • 250 g Mushrooms
  • 160 g Baby Tomatoes
  • 1 tsp Smoked Paprika
  • 1 tsp Salt
  • 60 ml Milk ¼ cup
  • 60 g Feta Cheese
  • Handful of Spinach
  • Handful of Fresh Herbs

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Add the chicken, tomatoes, mushrooms, milk, smoked paprika, salt, and minced garlic (if using) to a large casserole dish. Stir until everything is evenly coated.
  • Place the block of feta in the center of the dish.
  • Bake uncovered for 30–35 minutes, stirring once halfway through, until the chicken reaches an internal temperature of 165°F (74°C).

  • Remove the dish from the oven. Mash the feta with a fork and gently burst the roasted tomatoes. Stir everything together until a creamy sauce forms.
  • If you'd like a thicker sauce, spoon off a little of the excess tomato juices before mixing.
  • Stir through the spinach and fresh basil. The residual heat will wilt the spinach perfectly.
  • Serve immediately with your favorite side. Finish with a squeeze of fresh lemon juice and a sprinkle of extra basil, if desired.

Notes

  • Cut the chicken into 4–5 cm (1½–2-inch) pieces so it cooks evenly and stays juicy.
  • Cooking times can vary depending on your oven and the size of your chicken pieces. Bake until the chicken reaches an internal temperature of 165°F (74°C). If needed, continue baking in 5-minute intervals until fully cooked.
  • Cherry or grape tomatoes naturally release their juices while baking. If you prefer a thicker sauce, simply spoon off a little of the excess liquid before stirring everything together.
  • For the creamiest sauce, use a block of feta rather than pre-crumbled feta.
  • Feel free to customize the recipe with minced garlic, red pepper flakes, or a squeeze of fresh lemon juice before serving.
  • This recipe serves 2, but can easily be doubled for a larger crowd. Use a larger casserole dish and add a few extra minutes to the cooking time if needed.
