Ingredients
  

  • 350 g Banana (3 large bananas) - around 1 ½ cups
  • 2 Large Eggs
  • 100 g Sugar - ½ cup
  • 180 g Self-Raising Flour - 1 ½ cups
  • 1 Banana for the top (optional)

Instructions
 

  • Preheat your oven to 350°F (180°C) and line a 2lb loaf tin with parchment paper.
  • If needed, ripen your bananas by placing them (in their peels) on a plate in the oven while it preheats.
  • Mash three ripe bananas in a mixing bowl using a fork, whisk, or potato masher until smooth.
  • Add eggs and sugar to the mashed bananas and whisk until fully combined.
  • Sift self-raising flour into the bowl and gently fold the ingredients together until just combined.
  • Pour the batter into the prepared loaf tin, smoothing the top. Optionally, slice a banana in half lengthwise and place it on top for decoration.
  • Bake for 45-50 minutes, checking for doneness with a skewer or toothpick; it should come out with a few moist crumbs.
  • Allow the banana bread to cool completely in the tin before slicing and serving.

TIPS & NOTES:
  • For the best flavor and sweetness, use ripe, spotty bananas. If your bananas aren't ripe, pop them in the oven while it preheats to caramelize them.
  • Avoid overmixing the batter to ensure your banana bread stays soft and fluffy. Fold until just combined.
  • If using a smaller loaf tin, increase the baking time slightly. For a larger tin, check for doneness earlier to avoid overbaking.
