Crunchy, chocolatey, and naturally nourishing, these Chocolate Quinoa Crunch Bites are an easy no-bake snack that delivers satisfying crunch and wholesome energy in every bite.
Melt the dark chocolate and peanut butter together in a heat-proof bowl using the microwave or a double boiler. Stir until smooth.
Toast the quinoa in a dry pan over medium heat for 4–5 minutes, stirring continuously. It should start popping and turn lightly golden.
Stir the toasted quinoa into the melted chocolate–peanut butter mixture until evenly combined.
Divide the mixture between 6 cavities of a silicone muffin tray, or pour it into a small dish lined with parchment paper.
Refrigerate for at least 30 minutes, or until fully set. Then remove from the mould or slice into pieces and enjoy.
