These Chocolate Truffle Easter Eggs are perfect if you're looking for a healthier alternative to Chocolate Easter Eggs. They're made using just four simple, nourishing ingredients, they're easy and fun to make, and they're also gluten-free, vegan-friendly, and refined sugar-free.
Blend ripe bananas and nut butter until smooth. Add a teaspoon of water or milk if needed for blending.
Combine the banana-nut butter mixture with cocoa powder until just combined. Adjust cocoa powder if mixture is too wet.
Shape the mixture into egg shapes by rolling into balls and then pressing flat into ovals. Place on parchment paper on a baking tray and freeze.
Melt dark chocolate, add orange zest if desired, and whisk until smooth. Dip frozen eggs in melted chocolate and place back on parchment paper.
Optional: Drizzle any leftover melted chocolate on top of eggs for decoration.
Freeze until set. Store in the refrigerator for a truffle-like consistency or in the freezer for a solid chocolate bar texture.
