  • Add the cottage cheese, nut butter, coconut sugar (or honey), oat flour, vanilla extract, and salt to a blender or food processor. Blend until completely smooth and creamy. The mixture should be thick, creamy, and resemble cookie dough.
  • Transfer the mixture to a mixing bowl and fold through the dark chocolate chips.
  • Divide the mousse between four serving glasses or bowls (or two if making large servings).
  • Refrigerate for at least 30 minutes to allow the mousse to thicken and the flavors to develop.
  • Serve chilled, topped with extra chocolate chips, a drizzle of nut butter, or a sprinkle of flaky sea salt if desired.
