Add the cottage cheese, nut butter, coconut sugar (or honey), oat flour, vanilla extract, and salt to a blender or food processor. Blend until completely smooth and creamy. The mixture should be thick, creamy, and resemble cookie dough.
Transfer the mixture to a mixing bowl and fold through the dark chocolate chips.
Divide the mousse between four serving glasses or bowls (or two if making large servings).
Refrigerate for at least 30 minutes to allow the mousse to thicken and the flavors to develop.
