Preheat the oven to 180°C (350°F). Grease or line a 2lb loaf tin.
In a large bowl, whisk together the eggs and yogurt until smooth.
Stir in the oat flour, bicarbonate of soda, salt (if using), and garlic powder (if using). Mix until just combined.
Add 100g of the grated cheddar cheese and fold it into the batter until evenly distributed.
Pour the batter into the prepared loaf tin and smooth the top. Sprinkle the remaining 20g of cheese evenly over the top.
Place in the oven and bake for 40-45 minutes or until golden brown and a toothpick inserted in the center comes out clean.
Allow to cool in the tin for 5-10 minutes before transferring to a wire rack. Slice once cooled slightly.

TIPS & NOTES:
Use finely ground oat flour for the best texture.
Don’t overmix once the flour is added to keep the bread soft.
Freshly grate cheese for better melt and flavor.
Let the loaf cool 10–15 minutes before slicing.
If adding veggies, squeeze out excess liquid first.
MEASUREMENTS:I always recommend using a kitchen weighing scale and using weighted measurements. This will result in a more accurate process and your bread will come out perfectly.
