These Dark Chocolate Bounty Bars are super easy to make; you only need 5 ingredients, and they're healthy too! They're a perfect snack or dessert to meal-prep and keep in your fridge or freezer.
Add yogurt, liquid sweetener, and vanilla to a bowl and whisk with a fork or spatula until smooth.
Add coconut and mix to combine.
Divide into 12 pieces and shape into bars using your hands.
Melt dark chocolate in the microwave or double boiler.
Drop each bounty in and use a fork to completely coat them. Lift out and allow excess chocolate to drip off.
Place on a sheet of parchment paper and sprinkle some more coconut on top.
Place in the freezer for at least 10 minutes or until set.

If the mixture is too dry or crumbly to shape, add an extra drizzle of liquid sweetener. If the mixture is too wet, place in the freezer for a couple of minutes.
Before shaping the bars, chill the mixture in the fridge for 15-20 minutes to make it easier to handle.
Work quickly when coating the bars in chocolate to prevent it from hardening too soon, ensuring a smooth and even coating.
MEASUREMENTS:
