Healthy Protein Snickers Bites

A wholesome, no-bake take on a classic Snickers bar, these protein-packed bites are soft, nutty, chocolatey, and perfectly satisfying for sweet cravings any time of day.

  • Line a 20 cm x 15 cm loaf pan (or similar size dish) with baking paper, leaving an overhang so you can lift the slab out later.
  • Combine almond flour, protein powder, liquid sweetener and nut butter in a bowl and mix until a thick, pressable dough forms. If the dough is too dry add a teaspoon of milk at a time until it holds together; if too sticky add a little more almond flour.
  • Press the dough firmly and evenly into the base of the lined pan until smooth.
  • For the filling, stir the nut butter with liquid sweetener until glossy and spreadable.
  • Spread the nut butter mixture evenly over the pressed base and scatter peanuts over the top, pressing them in lightly.
  • Place the pan in the freezer for 20 to 30 minutes, until the layers are very firm.
  • Lift the chilled slab from the pan using the paper overhang and transfer to a cutting board. Slice into small squares or bars using a sharp knife.
  • Melt the dark chocolate in short microwave bursts or over a double boiler, stirring until smooth. Dip each square into the melted chocolate, let excess drip off, and set on baking paper.
  • Chill in the fridge or freezer for 10 to 15 minutes until the chocolate is fully set.

TIPS & NOTES:
  • Press the base firmly into the pan to help the bites hold together cleanly once sliced.
  • If your base feels too dry or crumbly, add a teaspoon of milk at a time until it comes together; if too sticky, add a little extra almond flour.
  • Warm the nut butter slightly before mixing the filling so it spreads smoothly and evenly.
  • Freeze the slab until very firm before slicing for neat layers and clean edges.
  • Use a sharp knife, wiped clean between cuts, for the best looking bites.
  • These bites taste best chilled or frozen, as the texture stays firm and the chocolate sets beautifully.
 
MEASUREMENTS:
I always recommend using a kitchen weighing scale and using weighted measurements. This will result in a more accurate process and your protein snickers will come out perfectly.
