Rich, fudgy, and naturally sweetened with dates, these No-Bake Brownie Bites are an easy chocolatey treat made with simple ingredients and coated in a smooth layer of dark chocolate.
Soak your dates in boiling water for at least 10 minutes, then drain the water from them.
Add the dates, cocoa powder, nut butter, salt, and vanilla to a food processor.
Blend until a thick, sticky dough forms.
Roll the mixture into small even balls and place on a lined tray. Place in the freezer whilst you melt your chocolate.
Melt the dark chocolate with coconut oil if using.
Dip each ball into the melted chocolate and place back onto the tray. Sprinkle on some flaky sea salt.
Refrigerate until the chocolate has fully set.

TIPS & NOTES:
Use soft Medjool dates for the best fudgy texture. If your dates are dry, soak them in hot water first.
Chill the brownie bites before dipping them in chocolate for a smoother coating.
If the mixture feels too dry, add a little extra nut butter. If it's too sticky, add more cocoa powder.
A sprinkle of flaky sea salt makes the chocolate flavour pop.
Store in the fridge for a firmer texture, or enjoy straight from the freezer for a truffle-like treat.
Swap the peanut butter for almond, cashew, or sunflower seed butter if preferred.
Add chopped nuts, shredded coconut, or a pinch of espresso powder for extra flavour.
These brownie bites freeze well, making them perfect for meal prep and chocolate cravings.
MEASUREMENTS:I always recommend using a kitchen weighing scale and using weighted measurements. This will result in a more accurate process and your peanut brownie balls will come out perfectly.
