PB&J Overnight Weetbix

Ingredients
  

  • 2 Weetbix
  • 60 ml milk (¼ cup)
  • 150 g Greek yogurt (⅔ cup)
  • 20 g peanut butter (1 tbsp)
  • 1 tbsp honey
  • 100 g frozen berries (¾ cup)
  • 10 g peanuts chopped

Instructions
 

  • Crush the Weetbix into a bowl or container. Pour over the milk and mix until fully softened and slightly thick.
  • In a separate bowl, stir together the Greek yogurt, peanut butter, and honey until smooth and creamy.
  • Microwave the frozen berries for about 1 to 2 minutes until soft and jammy. Mash slightly with a fork to create a chunky berry sauce.
  • Spread the peanut butter yogurt mixture over the Weetbix base. Spoon the warm berry layer on top.
  • Sprinkle with chopped peanuts.
  • Refrigerate for at least 1 hour or overnight for a thicker, set texture.

TIPS & NOTES:
  • Use thick Greek yogurt for the creamiest texture and best layers.
  • Let the berry mixture cool slightly before layering over the yogurt.
  • Adjust the honey to suit your preferred sweetness level.
  • Refrigerate overnight for the best texture and flavor.
  • Add the chopped peanuts just before serving to keep them crunchy.
  • Swap peanut butter for almond or cashew butter if preferred.
  • Stir vanilla protein powder into the yoghurt layer for an extra protein boost.
  • Fresh or frozen berries both work well in this recipe.
  • Make multiple portions ahead for an easy grab-and-go breakfast.
  • Add extra peanut butter or a drizzle of honey on top before serving for an indulgent finish.
 
MEASUREMENTS:
I always recommend using a kitchen weighing scale and using weighted measurements. This will result in a more accurate process and your overnight weet-bix will come out perfectly.
