These no-bake brownie cups, made with a chewy chocolate crust and filled with peanut butter, jam, and dark chocolate, are an easy, healthy, and delicious treat perfect for meal prep or entertaining.
Add pitted dates to a glass bowl and cover with boiling water. Leave to soak for at least 30 minutes.
Drain the dates then add to a blender or food processor along with the milk. Blend until smooth.
Transfer the blended dates to a mixing bowl then add 60g of peanut butter and the cocoa powder. Fold the mixture together with a fork or spatula.
Divide the brownie batter into 6 equal pieces then divide between your muffin tray. Press down and up the sides to create a well in the center.
Divide the other 60g of peanut butter between the brownie cups then divide the strawberry jelly on top.
Break the chocolate into pieces and melt it in a heatproof bowl. You can do this in the microwave by heating in 30-second intervals and stirring between each, or use a double boiler for more control.
Divide the melted chocolate on top of the brownie cups. You can add a few peanuts on top for visual appeal.
Place in the refrigerator for 5-10 minutes or until the chocolate has set.
