Decadent, gooey chocolate brownies topped with a layer of pecan pie filling - the best of both worlds. They're easy to make and are healthy, too!

Instructions
 

  • Preheat oven to 180°C / 160°C fan and line a loaf tin (10 x 20cm) with parchment paper.
  • Add Oat Mylk Chips to a bowl and melt in the microwave in short bursts or using a double boiler.
  • Add in sugar and yoghurt and whisk until smooth.
  • Sift in the flour, raising agents, salt and Cacao Powder and fold until just combined with a spatula.
  • Transfer the mixture into a loaf tin and bake for 20 minutes.
  • In the meantime, prepare the pecan pie topping by adding all the ingredients to a bowl and folding until it is well combined.
  • Transfer this mixture onto your half baked brownie and spread it out into an even layer.
  • Bake for a further 15 minutes.
  • Allow to cool completely before slicing with a sharp knife.

MEASUREMENTS:
Whilst I do provide the US cup measurements for the recipe, I always recommend using a kitchen weighing scale and using the weighted measurements instead. This will result in a more accurate process and your cake will come out perfectly.
TIPS:
Use Good Quality Ingredients: High-quality ingredients, such as the Oat Mylk Chocolate and Organic Cacao Powder I mentioned, can make a significant difference in the taste and texture of your brownies.
Slicing Tip: Allow the brownies to cool completely before slicing. This helps them set and maintain their shape. You can even refrigerate them for a short while to make slicing easier. When slicing, use a sharp knife. To achieve clean and neat cuts, you can dip the knife in hot water and wipe it clean between slices.
Evenly Spread the Pecan Pie Topping: Ensure that the pecan pie topping is spread evenly over the par-baked brownie layer. This ensures a consistent flavour and texture throughout the brownies.
Dairy-Free & Vegan Options: For a vegan version, use dairy-free chocolate, yoghurt and milk.
