Spicy Peanut Ramen with Ground Beef

Introducing my high-protein spicy peanut ramen noodles with ground beef - a quick, warm, cosy bowl that’s full of flavor and so satisfying.

Equipment

Ingredients
  

  • 250 g extra lean beef mince 5% fat or lower
  • 200 g ramen noodles
  • 1 cups cabbage shredded
  • 1 medium carrot julienned
  • 2 spring onions sliced

Spicy Peanut Sauce:

  • 30 g peanut butter (2 tbsp)
  • 2 tbsp soy sauce
  • 1-2 tsp chilli flakes or chilli paste to taste
  • ½ cup hot water
  • 1 tsp minced garlic
  • 1 tbsp ginger puree
  • 1 tbsp honey (optional)

Instructions
 

  • Cook ramen noodles according to packet instructions. Drain and set aside.
  • Heat a pan over medium-high heat. Add the beef mince and cook until browned, breaking it up as it cooks.
  • In a small bowl, mix together the peanut butter, soy sauce, chilli, ginger, garlic, and hot water until smooth and pourable.
  • Add the sauce, shredded cabbage, carrot, sliced spring onion, and noodles. Cook for 2–3 minutes until slightly softened but still crunchy.
  • Toss well until everything is evenly coated and heated through.
  • Remove from heat and top with sliced spring onions. Serve immediately or divide into containers for meal prep.

TIPS & NOTES:
  • Use extra lean beef mince (5% or lower) to keep this high-protein and lower in calories.
  • Don’t overcook the noodles, they should be slightly firm so they don’t go soft when tossed in the sauce.
  • Adjust the sauce consistency with a splash of hot water if it thickens too much.
  • Taste and adjust the spice level to your preference.
  • Add extra cabbage for more volume without adding many calories.
  • For extra flavour, add garlic or ginger when cooking the beef.
  • Finish with a squeeze of lime for freshness and balance.
  • Store in the fridge for up to 3 days and reheat with a splash of water to loosen the sauce.
 
MEASUREMENTS:
I always recommend using a kitchen weighing scale and using weighted measurements. This will result in a more accurate process and your Spicy Peanut Butter Noodles will come out perfectly.
