Viral Air-Fryer Tortilla Kebab Skewers

Crispy, juicy air-fryer tortilla kebab skewers layered with boldly seasoned beef, a little bit viral, very easy to make, and seriously fun to eat.

Ingredients
  

  • 500 g Extra Lean Beef Mince (1.1 lbs)
  • 1 Red Bell Pepper
  • 1 Red Onion
  • 3 cloves Garlic
  • 1 tbsp Smoked Paprika
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1 tsp Salt
  • ½ tsp Black Pepper
  • 5 Tortilla Wraps

Instructions
 

  • Finely dice the red pepper and red onion, then mince the garlic. Make sure these are chopped really finely. I like to put them in a food processor; it's easier and comes out perfectly chopped!
  • Add the beef mince, chopped vegetables, garlic, smoked paprika, cumin, coriander, salt and black pepper to a large bowl and mix well until fully combined.
  • Trim the rounded edges from each tortilla to create large squares.
  • Place one tortilla square on a clean surface and spread a thin, even layer of the mince mixture over the top. Place another tortilla on top and repeat until all tortillas and mince are used, finishing with a tortilla on top. Press down firmly to compact the stack.
  • Using a sharp knife, cut the stacked tortillas lengthways into 6 long strips.
  • Carefully flip each strip onto its side so the layers are visible, then insert a skewer lengthways through each strip.
  • Once skewered, cut across the stack to create 8 individual skewers.
  • Preheat the air fryer to 190°C / 375°F. Place the skewers in a single layer and air-fry for 8 minutes, turning halfway, until cooked through and lightly golden.
  • If meal-prepping this recipe, store the uncooked skewers in an air-tight container, then airfry before serving.
  • Remove from the air fryer and serve hot with guacamole, or your sauce of choice.

TIPS & NOTES:
  • Spread the mince in a thin, even layer so the skewers cook through evenly and stay juicy.
  • Chop the vegetables very finely to avoid excess moisture and help everything hold together.
  • Press the tortilla stack down firmly before slicing to keep the layers neat and compact.
  • Cook the skewers in a single layer for the best crisping and even colour.
  • Turn halfway through cooking to get that golden finish on all sides.
  • These are best served straight from the air fryer while the tortillas are crisp and the beef is juicy.
 
MEASUREMENTS:
I always recommend using a kitchen weighing scale and using weighted measurements. This will result in a more accurate process and your Tortilla Kebab Skewers will come out perfectly.
