Finely dice the red pepper and red onion, then mince the garlic. Make sure these are chopped really finely. I like to put them in a food processor; it's easier and comes out perfectly chopped!
Add the beef mince, chopped vegetables, garlic, smoked paprika, cumin, coriander, salt and black pepper to a large bowl and mix well until fully combined.
Trim the rounded edges from each tortilla to create large squares.
Place one tortilla square on a clean surface and spread a thin, even layer of the mince mixture over the top. Place another tortilla on top and repeat until all tortillas and mince are used, finishing with a tortilla on top. Press down firmly to compact the stack.
Using a sharp knife, cut the stacked tortillas lengthways into 6 long strips.
Carefully flip each strip onto its side so the layers are visible, then insert a skewer lengthways through each strip.
Once skewered, cut across the stack to create 8 individual skewers.
Preheat the air fryer to 190°C / 375°F. Place the skewers in a single layer and air-fry for 8 minutes, turning halfway, until cooked through and lightly golden.
If meal-prepping this recipe, store the uncooked skewers in an air-tight container, then airfry before serving.
Remove from the air fryer and serve hot with guacamole, or your sauce of choice.
