Add the diced apple, honey, and cinnamon to a small frying pan over medium heat. Cook for 6 to 8 minutes, stirring occasionally, until the apples are soft, caramelized, and coated in a sticky cinnamon glaze. Remove from the heat and allow to cool completely. For a quicker option, microwave the diced apple with the honey and cinnamon for 1 to 2 minutes, or until softened.
In a jar or bowl, combine the rolled oats, chia seeds, yogurt, milk, cinnamon and honey. Stir until well combined.
For pretty layers: Spoon half of the oat mixture into the bottom of a jar, top with half of the caramelized apples, then repeat with the remaining oats and apples.
For the easiest method: Fold half of the caramelized apples through the oat mixture and spoon into a jar or bowl. Top with the remaining apples.
Cover and refrigerate for at least 4 hours, or overnight.
If desired, finish with an extra sprinkle of cinnamon, chopped nuts, a drizzle of honey, or a spoonful of nut butter. Enjoy cold, or warm in the microwave for 30 to 60 seconds for a cozy breakfast.
