These Chickpea Chocolate Truffles are a quick, easy, and healthy treat made with just five ingredients. They're rich, and chocolatey with a sneaky boost of protein and fiber.
Add your drained and rinsed chickpeas to your food processor or blender along with nut butter, liquid sweetener, and cocoa powder.
Blend until smooth.
Refrigerate for five minutes, then divide into 10 pieces and roll each into a ball.
Melt your chocolate in the microwave, stopping and stirring every 30 seconds to avoid burning – or melt your chocolate using a double boiler.
Dip and coat each truffle in dark chocolate, then place on a sheet of parchment paper.
Refrigerate or freeze until the chocolate shell has set.

TIPS & NOTES:
For a smoother texture, blend the chickpeas thoroughly until no lumps remain.
If the mixture is too soft to roll, chill it in the fridge for 10-15 minutes.
Use a fork to dip the truffles in melted chocolate for an even coating.
Add a sprinkle of sea salt or crushed nuts on top for extra flavor and texture.
Store truffles in an airtight container to keep them fresh and prevent them from absorbing other flavors in the fridge.
