What Makes These Chickpea Chocolate Truffles Healthy?
These truffles are more than just a delicious treat—they’re packed with wholesome ingredients that nourish your body while satisfying your sweet tooth. Here’s what makes them healthy:
- High in Protein and Fiber: Chickpeas are the star ingredient, providing a boost of plant-based protein and fiber. This helps keep you fuller for longer, supports digestion, and stabilizes blood sugar levels.
- Refined Sugar-Free: Instead of processed sugar, these truffles are sweetened with natural liquid sweeteners like honey, maple syrup, or agave. This makes them a better option for reducing sugar spikes while still delivering sweetness.
- Healthy Fats: The nut or seed butter adds a dose of healthy fats, which are essential for brain function and keeping you energized. You can even choose a nut-free alternative if you have allergies.
- Antioxidant-Rich Dark Chocolate: Dark chocolate (especially varieties with 70% cocoa or higher) is packed with antioxidants, which can help reduce inflammation and support heart health. Choosing a refined sugar-free option enhances these benefits.
Ingredients Needed
These are the ingredients you’ll need to make this Chickpea Chocolate Truffles. You can find the exact measurements in the recipe card at the bottom of this page.
- Chickpeas: Chickpeas serve as the base of these healthy chocolate truffles. They add protein and fiber, and once blended they add an amazing texture. I promise, you do not taste them! I use tinned chickpeas, but you can cook your own if you prefer.
- Nut Butter: Adds a lovely richness and texture to the chocolate truffles whilst adding healthy fats. I use smooth peanut butter, but you can use any nut or seed butter.
- Liquid Sweetener: Such as honey, maple syrup, agave, or date syrup. This adds sweetness whilst keeping these chocolate truffles refined sugar-free.
- Cocoa Powder: Adds a rich chocolate flavor to the truffles and also helps to thicken the mixture. You can also use Cacao Powder.
- Dark Chocolate: Adds a rich chocolatey flavor and contributes to the solidity of the fudge. Dark chocolate is a great antioxidant and anti-inflammatory ingredient; and YES – it is healthy! Try to use a refined sugar-free dark chocolate like this one. I actually used a dark chocolate containing coconut bits and it was so delicious!
Equipment Needed:
- Digital Food Scale: For accurate measurements and perfect results.
- Blender or Food Processor
- Heat-proof bowl: For melting your chocolate.
- Parchment Paper: To place your chocolate-dipped truffles on.
How to make Chickpea Chocolate Truffles
Here is a detailed summary of how to make this recipe. I’ve also included some photos, and you can find the recipe video in the recipe card. At the bottom of this page is a summarized version that can be printed.
Step One:
Add your drained and rinsed chickpeas, nut or seed butter, liquid sweetener of choice, and cocoa powder to a blender or food processor.
Step Two:
Blend until smooth. If your blender isn’t very strong, you can blend just the chickpeas, nut butter, and liquid sweetener first, then mix your cocoa powder in after.
Step Three:
Once smooth, roll the mixture into balls – you can decide which size you want – I managed to get 12 large truffles from the mixture but you can make smaller truffles and you’ll get more. If the mixture is too wet to roll into balls you can place the bowl in the fridge until it is more solid. You can also use damp hands to roll into balls.
Step Four:
Once you’ve rolled your truffles into balls, melt your chocolate. Melt the dark chocolate using a double boiler or in the microwave, stopping and stirring every 30 seconds to prevent burning.
Step Five:
Drop each truffle into your dark chocolate and use a fork to coat, then allow the excess chocolate to drip off before placing it on a sheet of parchment paper on a baking tray, chopping board or plate.
Step Six:
Add some coarse salt or chopped nuts on top.
Step Seven:
Refrigerate until the chocolate shell has set and enjoy!
Tips & Notes
- Ensure Your Chickpeas Are Well-Drained: To avoid excess moisture, drain and rinse your chickpeas thoroughly. Pat them dry with a paper towel before blending for the best texture.
- Adjust Consistency if Needed: If your truffle mixture feels too soft to roll, pop it in the fridge for 10-15 minutes to firm up. If it’s too dry, add a little more nut butter or liquid sweetener to reach a smooth, rollable texture.
- Use Quality Dark Chocolate: For the healthiest option, choose dark chocolate with at least 70% cocoa content and minimal added sugar. Refined sugar-free varieties work best if you want to keep these truffles as healthy as possible.
- Customize Your Coating: While dark chocolate is a classic choice, you can also roll the truffles in unsweetened cocoa powder, shredded coconut, or crushed nuts for variety.
- Nut-Free Option: Swap the nut butter for a seed butter (like sunflower seed butter or tahini) to make these truffles completely nut-free.
- Boost the Flavor: Add a pinch of sea salt to the truffle mixture for a richer chocolate taste, or stir in a splash of vanilla extract for added warmth and depth.
Storage Instructions
Refrigerator: Store the chickpea chocolate truffles in an airtight container in the fridge for up to 1 week. This keeps them fresh while maintaining their smooth, fudgy texture.
Freezer: For longer storage, freeze the truffles in a single layer on a baking sheet until solid, then transfer them to a freezer-safe container or zip-top bag. They’ll keep well for up to 3 months.
To Serve: Enjoy them straight from the fridge for a firm, chewy bite, or let them sit at room temperature for a few minutes if you prefer a softer texture. If frozen, allow the truffles to thaw for 5-10 minutes before eating.
FAQ
Do these truffles taste like chickpeas?
Nope! Once blended with cocoa powder, nut butter, and sweetener, the chickpeas become smooth and creamy—without any chickpea flavor. The rich chocolate coating also helps mask any hint of legumes.
Can I make these truffles nut-free?
Absolutely! Simply swap the nut butter for a seed butter like sunflower seed butter or tahini. This makes the truffles completely nut-free while keeping the texture rich and creamy.
What if my truffle mixture is too soft to roll?
If the mixture is too sticky or soft, place it in the fridge for 10-15 minutes to firm up. You can also lightly dampen your hands to make rolling easier.
Can I freeze these truffles?
Yes! These truffles freeze beautifully. Store them in an airtight container or freezer-safe bag for up to 3 months. Let them thaw for a few minutes at room temperature before enjoying.
What kind of dark chocolate should I use?
Use high-quality dark chocolate with at least 70% cocoa for a rich flavor and added health benefits. For a healthier option, choose a refined sugar-free variety.
Can I add extra flavors or mix-ins?
Definitely! Try adding a splash of vanilla extract, a pinch of sea salt, or even a bit of instant coffee powder to enhance the chocolate flavor. You can also roll the truffles in shredded coconut, cocoa powder, or crushed nuts for extra texture.
