These Ferrero Rocher Fudge cups are a healthy, no-bake treat made with just four ingredients, offering a delicious combination of rich chocolate, crunchy rice crispies, and hazelnuts.
Break the chocolate into pieces and melt it in a heatproof bowl. You can do this in the microwave by heating in 30-second intervals and stirring between each, or use a double boiler for more control.
Stir the nut butter into the melted chocolate and mix until smooth and well combined.
Add the rice crispies and chopped hazelnuts to the mixture, folding gently until evenly distributed.
Spoon the mixture into a silicone muffin tray for individual portions, or pour it into a small dish or loaf tin lined with parchment paper.
Refrigerate the fudge for 15-20 minutes, or until fully set.
Once set, remove the fudge from the molds or slice into squares or bars. Store in the fridge for up to 7 days, or freeze for longer storage.

TIPS & NOTES:
For a vegan option, use dairy-free chocolate and a plant-based nut or seed butter.
To make the fudge nut-free, substitute hazelnuts with sunflower seeds or pumpkin seeds and use sunflower butter or tahini.
If you prefer a sweeter taste, swap dark chocolate for milk chocolate.
Use puffed quinoa or crushed rice cakes if you don’t have rice crispies on hand.
For easy removal, line your dish or tin with parchment paper or use a silicone mold.
MEASUREMENTS:
I always recommend using a kitchen weighing scale and using weighted measurements. This will result in a more accurate process and your fudge will come out perfectly.
