Healthy Single-Serve Banana Bread (made in the microwave!)

  • Slice off 3 thin slices of banana and set it aside, then mash the rest.
  • Add in the rest of the ingredients and mix to combine.
  • Add the sliced banana into the bottom of a greased microwave-safe bowl or mug then pour the batter on top.
  • Microwave for 1 minute OR bake in the oven @ 350°F (180°C / 160°C fan) for 8-10 minutes. Flip it onto a plate and enjoy!

MEASUREMENTS:
  • Whilst I do provide the US cup measurements for the recipe, I always recommend using a kitchen weighing scale and using the weighted measurements instead. This will result in a more accurate process and your cake will come out perfectly.
TIPS:
  • Pinch of salt: Bring out the natural sweetness
  • 1 tsp Vanilla Extract: Adds another depth of flavour
  • Add-ins: You can add in some chocolate chips or nuts for extra deliciousness.
