ingredients needed
Without further ado, let’s take a look at the wholesome and delicious ingredients that come together to create this masterpiece:
Banana: The star of the show and the reason this recipe exists! Bananas bring natural sweetness and moisture to this quick banana bread. Using ripe bananas is essential as they not only provide sweetness but also a rich, banana flavor.
Wholemeal Flour: Wholemeal flour adds a wholesome twist to this recipe. It’s a source of fibre and nutrients, making your banana bread not just delicious but also nutritious. The nutty flavour of wholemeal flour complements the sweetness of the bananas beautifully.
Baking Powder: Baking powder is your secret weapon for creating that fluffy texture in your banana bread. It’s the leavening agent that helps your bread rise and achieve that perfect, cake-like consistency.
Cinnamon: A pinch of cinnamon goes a long way in enhancing the flavour profile of your banana bread. It brings warmth and a hint of spice, perfectly complementing the sweet banana taste.
Milk: Milk adds moisture to your banana bread, ensuring it’s tender and delicious. You can use your favourite milk, whether it’s dairy, almond, soy, or any other type you prefer. It’s the finishing touch that binds all the ingredients together.
Ingredient Substitutions
1. Wholemeal Flour: If you don’t have wholemeal flour, you can substitute it with all-purpose flour without significantly affecting the recipe’s texture. You can also use oat flour, but this will change the texture of this cake. Either use store-bought oat flour or make your own by blending rolled oats until they form a fine powder.
2. Milk: Any type of dairy milk, such as cow’s milk, will work well in this recipe. If you prefer a non-dairy or vegan option, you can use almond milk, soy milk, coconut milk, or any other plant-based milk of your choice.
3. Cinnamon: This is optional, but I think cinnamon in banana bread is just *chefs kiss*. If you don’t like cinnamon you can use nutmeg or all-spice or just omit it completely.
How to make single-serve banana bread in the microwave
I’ve written the step-by-step method below, but I’ve also made a video for you to follow along with!
Step 1: Mash your nanas
Begin by slicing off 3 thin slices of banana. Set them aside; we’ll use them for a special touch later. Now, take the remaining banana and give it a good mash until it’s smooth and creamy.
Step 2: Make the batter
Into the mashed banana, add the wholemeal flour, baking powder, cinnamon, and milk. Mix everything together until you have a well-combined batter that’s just waiting to become a delicious banana bread.
Step 3: Prep your mug
Take your microwave-safe bowl or mug, give it a quick greasing, and place those thin banana slices at the bottom. This is where the magic happens!
Step 4: Pour it up, pour it up
Now, pour your banana bread batter right on top of those banana slices. It’s like a secret surprise waiting to be discovered.
Step 5: Nuke it
Pop your bowl or mug into the microwave for just 1 minute. Yep, you read that right, in only 60 seconds, you’ll have a warm, fragrant banana bread ready to delight your senses. The top of the banana bread should look a bit moist. If the Banana Bread still looks raw, pop it back in for a few more seconds. Keep an eye on your mug to prevent any spillage, or place the mug on some kitchen paper towel, just in case!
Step 6: IT’S READY!
Carefully take your banana bread out of the microwave (it’ll be hot!). You’ve just created a delicious treat in no time at all. Enjoy every bite!
FAQ
Yes, of course, but it will take longer than 5 minutes. Follow the same process, but bake in the oven at 180°C (350°F / 160°C fan oven) for 8-10 minutes.
take your banana bread to the next level
Whilst this Banana Bread is delicious, you can make it even more so by adding a couple of ingredients:
- Pinch of salt: Bring out the natural sweetness
- 1 tsp Vanilla Extract: Adds another depth of flavour
- Add-ins: You can add in some chocolate chips or nuts for extra deliciousness.
how to store banana bread
Room Temperature: If you plan to enjoy your banana bread within 1-2 days, you can keep it at room temperature. To preserve its freshness, place it in an airtight container or wrap it securely in plastic wrap. Store it in a cool, dry place away from direct sunlight and heat sources to maintain its delightful texture.
Refrigeration: If you’d like to extend the shelf life to about a week, refrigeration is your best bet. Wrap your banana bread tightly with plastic wrap or place it in an airtight container. Refrigeration helps to keep it moist and prevents spoilage. Before serving, you can briefly warm up slices in a microwave or toaster oven to bring back that just-baked feel.
Freezing: If you want to keep your banana bread for an extended period, freezing is the way to go. Wrap with plastic wrap or use freezer-safe zip-top bags. Try to remove as much air as possible to prevent freezer burn. Your frozen treasure can maintain its quality for 2-3 months. When you’re ready to indulge, thaw it in the refrigerator overnight or give a slice a quick zap in the microwave or toaster. Keep in mind that the texture might change slightly after freezing, but the flavour and overall quality should remain excellent.
enjoy your microwave banana bread!
And there you have it – a delectable banana bread that’s quick, easy, and oh-so-satisfying. Whether you’re facing a sudden craving or rescuing a lonely banana, this recipe is your go-to solution. So, what are you waiting for? Give it a try and let your taste buds thank you later!
