This Blueberry Bagel Recipe is made without yeast, instead it's made with simple ingredients like whole wheat flour and yogurt, making them easy and healthy! These bagels are fun to make, they are absolutely delicious and you only need 5 ingredients to make them!
Preheat oven to 350℉ / 180℃ / 160℃ fan and line your baking tray with parchment paper.
Add flour, baking powder and sugar to a bowl and mix with a spatula.
Add yogurt then fold with a spatula or mix with your hands to combine the dough. If it feels too sticky, add more flour and if it's too dry, add some more yogurt.
Divide the dough into 4 equal pieces.
On a floured surface, spread the dough into a flat, round shape (around 15cm wide).
Place some blueberries around the edge then use your fingers to fold the edges of the dough over the blueberries, ensuring they are covered. Create a hole in the middle of the bagel (around 3cm big).
Bring a pot of water to a simmer then place the bagels in the water for 2 minutes on each side.
Place the bagels on your baking tray. Reshape the bagels and the hole if needed.
Whisk your egg, if using, and lightly brush over each bagel. Sprinkle some more coconut sugar on top.
Bake for 25-30 minutes until golden.
