Coconut Sugar – To add a touch of sweetness to these blueberry bagels whilst still keeping them healthy and refined sugar-free I use coconut sugar. Other options are: panela sugar, monkfruit sweetener or regular white or brown sugar.

Yogurt – To create the simple 3-ingredient dough whilst adding a good dose of protein and healthy fats. Try to use a thick yogurt like Greek yogurt or Double Cream yogurt, and make sure that there are no additives or artificial sweeteners. You can use a dairy-free alternative like Soy or Coconut Yogurt to make vegan blueberry bagels.

Blueberries – For a pop of flavor and juicy sweetness I like to use frozen blueberries – they’re also sweeter than fresh blueberries and are always available! You can use fresh or freeze-dried blueberries too.

Egg – This is optional as it’s only used for an egg wash to make the bagels golden and crispy. You can skip the egg-wash altogether or you can use some milk or plant-based milk to make these bagels vegan-friendly.

Step 1:
Start by pre-heating your oven and lining your baking tray with a sheet of parchment paper.

Step 2:
Add the flour, baking powder and sugar to your bowl and mix well to evenly distribute the ingredients.

Step 3:
Add in the yogurt and fold with a spatula to combine. Use your hands to work the mixture into a solid dough. If the dough seems too wet add some more flour and if it’s too dry, add some more yogurt.

Step 4:
Evenly divide the dough into four pieces. I do this by weighing my doughball then dividing that total by four and weighing out the individual pieces.

Step 5:
Lightly dust a flat surface or countertop with flour then spread each piece of dough out into a flat, round shape – almost as if you’re making a pizza.

Step 6:
Add a few blueberries around the edge, then fold over the edges to cover the blueberries. Squeeze the edges so that the dough sticks together, then use your finger to poke a hole in the center. Shape the dough into a bagel shape, making sure the blueberries stay inside the dough. Make sure the hole is around 3 cm wide.

Step 7:
Bring a pot of water to a simmer then individually drop the bagels in, leave each for two minutes, flip over in the pot for a further minute then remove from the water.

Place the bagels on your baking paper.

Whisk an egg if you’re doing an egg wash then lightly brush over the top of each bagel and then sprinkle some sugar on top to create a sweet, caramelized crust.
