Why These Are the Best Healthy Banana Oatmeal Muffins

- Wholesome ingredients: Made with rolled oats, these muffins are rich in fiber and naturally filling.

Ingredients Needed
Now, don’t get mad. Technically, you need four ingredients. But in my defense, the fourth ingredient is water, and my professional opinion is that it doesn’t count! If you’ve got rolled oats, bananas, and baking powder in your pantry, I’m willing to bet you have water too.

- Old-Fashioned Rolled Oats: Rolled oats create the base of these healthy banana oatmeal muffins. Blending them into a fine oat flour gives the muffins a soft texture while adding fiber and whole-grain goodness. If you already have oat flour, you can use that instead.
- Ripe Bananas: Ripe bananas naturally sweeten these muffins while adding moisture and helping bind the ingredients together. The riper your bananas, the sweeter and more flavorful your muffins will be.
- Baking Powder: Baking powder is the leavening agent that helps these banana oatmeal muffins rise. It works with the oat flour to create a lighter, fluffier texture, despite the recipe containing no eggs or oil.
- Water: A small amount of water brings the wet ingredients and dry ingredients together to create the perfect muffin batter. If you’d like to add a little extra protein, you can substitute the water with your favorite milk.
- Optional Mix-Ins: If you have vanilla extract and a little salt on hand, I highly recommend adding them. They’re completely optional but enhance the flavor beautifully. You can also stir in dark chocolate chips or any of your favorite mix-ins for extra flavor and texture.

Equipment Needed
- Blender or Food Processor: If you’re using rolled oats, you’ll need a blender or food processor to blend them into a fine oat flour. Alternatively, you can skip this step by using store-bought oat flour.
- Silicone Muffin Tray (Highly Recommended): Because these healthy banana oatmeal muffins are made without oil or butter, they can stick to regular muffin tins and paper liners. I highly recommend using a silicone muffin tray or a good-quality non-stick muffin pan for easy removal. If you’re using paper liners, be sure to generously grease them with cooking spray or use non-stick parchment liners.
- Mixing Bowl: You’ll need a medium mixing bowl to combine the dry and wet ingredients into your muffin batter.
- Plate & Fork: Mashing the bananas on a plate with a fork is much easier than trying to mash them in a bowl.

How to Make 3 Ingredient Banana Oatmeal Muffins
I’ve included step-by-step photos below, and don’t forget to watch the recipe video for a visual guide!
Step 1:
Preheat your oven to 180°C (350°F) or 160°C fan and lightly grease your muffin tray. I highly recommend using a silicone or non-stick muffin tray, as these muffins don’t contain any added oil or butter and can stick to regular pans or paper liners.
Step 2
If you’re using rolled oats, blend them in a blender or food processor until they resemble a fine oat flour. In a medium mixing bowl, whisk together the oat flour, baking powder, and salt (if using).
Step 3
Mash the ripe bananas with a fork until they’re as smooth as possible. The smoother the bananas, the smoother your muffin batter will be.

Step 4
Add the mashed bananas, water, and vanilla extract (if using) to the dry ingredients. Fold everything together until no dry patches remain.

Step 5
If you’re adding chocolate chips, berries, nuts, or any other mix-ins, gently fold them into the muffin batter until evenly distributed.

Step 6
Divide the batter evenly between 9 standard muffin cups, filling each almost to the top. Sprinkle a few rolled oats over the tops if you’d like a simple decoration.

Step 7
Bake for 10–12 minutes, or until the tops are lightly set and spring back when gently pressed. Every oven is different, so yours may need an extra minute or two.
Allow the muffins to cool in the pan for at least 10 minutes before removing them. They continue to firm up as they cool, giving them the best texture.
Expert Tips for the Best Banana Oatmeal Muffins
- Use very ripe bananas. The riper the bananas, the sweeter and more flavorful your muffins will be. They’re also much easier to mash and blend into the batter.
- Blend the oats well. If you’re using rolled oats instead of oat flour, blend them into a fine, flour-like consistency. This creates a much softer, fluffier muffin.
- Measure your ingredients by weight. For the most consistent results, I always recommend using a kitchen scale, especially when baking.
- Let the batter rest. Once mixed, let the muffin batter sit for 5 minutes before dividing it into the muffin tray. This gives the oat flour time to absorb some of the moisture, resulting in a better texture.
- Don’t overbake. These healthy banana oatmeal muffins don’t contain oil, butter, or eggs, so they naturally have a softer texture than traditional muffins. Bake until the tops are just set, as they’ll continue to firm up while cooling.
- Use a silicone or non-stick muffin tray. Because this is a fat-free recipe, the muffins can stick to regular muffin tins and paper liners. A silicone tray or a well-greased non-stick pan works best.

How to Keep Your Banana Oatmeal Muffins from Being Mushy
Because these muffins are made with only three simple ingredients and contain no eggs, butter, or oil, they naturally have a softer texture than traditional banana muffins. That’s exactly what makes them such a wholesome option, but it also means a few simple baking tips can make all the difference.
If your muffins turned out mushy, here are a few things to check:
- Use ripe bananas, but not overly watery ones. Bananas vary in size and moisture, so using extra-large bananas can make the batter too wet.
- Blend the rolled oats into a fine oat flour. Larger pieces of oats won’t absorb moisture as evenly and can affect the final texture.
- Let the batter rest for 5 minutes before baking. This gives the oats time to absorb some of the liquid and helps create a more even crumb.
- Bake until the tops are lightly set. Every oven is different, so your muffins may need an extra 1–3 minutes. The tops should spring back lightly when touched.
- Let them cool completely. These muffins continue to set as they cool, so resist the temptation to eat one straight from the oven! Waiting at least 10 minutes makes a noticeable difference.
Remember, these muffins are designed to be soft, wholesome, and naturally moist. If you’re expecting a bakery-style banana muffin made with butter, oil, and refined flour, the texture will be different, but that’s exactly what makes these such a healthy and simple recipe.
These muffins have a softer texture than traditional bakery-style muffins and are somewhere between a classic muffin and baked oatmeal.

Banana Oatmeal Muffin Variations
One of my favorite things about these healthy banana and oatmeal muffins is how easy they are to customize. The simple muffin batter makes the perfect base for all kinds of delicious mix-ins.
Here are a few of my favorite ideas:
- Chocolate Chips: Stir dark chocolate chips or chocolate chunks into the batter for a sweeter treat.
- Fresh Berries: Blueberries, raspberries, chopped strawberries, or blackberries all work beautifully.
- Chopped Nuts: Walnuts, pecans, or almonds add a delicious crunch and healthy fats.
- Seeds: Pumpkin seeds, sunflower seeds, hemp seeds, or chia seeds all add extra nutrition and texture.
- Warm Spices: Ground cinnamon, ginger, nutmeg, or pumpkin pie spice pair perfectly with banana.
- Vanilla Extract: A teaspoon of vanilla enhances the natural sweetness of the bananas.
- Coconut: Fold in a handful of shredded coconut for a tropical twist.
- Dried Fruit: Raisins, chopped dates, or dried cranberries are a great way to add even more natural sweetness.
No matter which variation you choose, these healthy banana oatmeal muffins remain simple, wholesome, and perfect for breakfast, meal prep, or an afternoon snack.

Frequently Asked Questions
Yes! Instant oats will work in this recipe, although the texture may be slightly softer. For the best texture, I recommend using old-fashioned rolled oats and blending them into a fine oat flour. If you’re using store-bought oat flour, you can skip the blending step altogether.
No, but I highly recommend it. Blending the rolled oats into a fine oat flour gives these banana oatmeal muffins a much softer, fluffier texture. If you leave the oats whole, the muffins will be denser and have a texture that’s more similar to baked oatmeal.
No. Baking powder is the leavening agent that helps these muffins rise. Baking soda requires an acidic ingredient to activate, so it isn’t a direct substitute in this recipe.
Yes! If your air fryer is large enough to fit silicone muffin cups, these muffins can be air fried at 320°F (160°C) for 10–12 minutes. Since every air fryer cooks a little differently, check them with a toothpick and add another 1–3 minutes if needed.
I don’t recommend it. Almond flour behaves very differently from oat flour and absorbs much less moisture, so the muffins won’t have the same texture or structure. For the best results, stick with oat flour or blend your own rolled oats.
These muffins are naturally softer than traditional banana muffins because they’re made without eggs, butter, or oil. If your muffins seem mushy, make sure you’ve blended the oats into a fine oat flour, used ripe (but not overly large) bananas, and baked them until the tops are lightly set. They also continue to firm up as they cool, so allow them to cool in the pan for at least 10 minutes before removing them.
Yes! Simply use certified gluten free rolled oats and make sure your baking powder is gluten free. The remaining ingredients are naturally gluten free.
Yes! These healthy banana oatmeal muffins are naturally vegan because they’re made without eggs or dairy. If you’re adding chocolate chips, simply choose a dairy-free variety to keep the recipe completely vegan.
