This is possibly my new favorite recipe and I can’t wait for you to make them! They’re incredibly delicious and don’t taste healthy at all!
You only need four simple ingredients to make them, one of which might confuse you, but I promise you will love them! The secret ingredient? Cottage Cheese. Yup, I know, strange.
Cottage Cheese has become the new cauliflower (if you know, you know). It’s such a versatile ingredient that I’ve been incorporating into A LOT of my recipes lately. Some of my favorites include my Cottage Cheese Chocolate Fudge, Cottage Cheese Hummus, Lentil & Cottage Cheese Bread and Cottage Cheese Chocolate Mousse.
Cottage Cheese adds a delicious creaminess and a good dose of protein and healthy fats and I must admit – I’m a bit obsessed with it.
I think of all of my cottage cheese recipes, these healthy chocolate truffles take the number one spot. TRUST ME – they’re amazing! They really don’t taste like cottage cheese at all, they literally taste like chocolate truffles, but they’re actually good for you!

Cottage Cheese: I use a smooth cottage cheese that I buy in the store in South Africa (I’m not sure if this is globally available). You can just blend regular cottage cheese. You can use low fat, medium fat or full fat, depending on your macro needs.
Cocoa Powder: To add that delicious chocolatey flavor—cocoa powder contains antioxidants that help to improve cholesterol and blood sugar levels and reduce the risk of heart disease. It also helps to reduce inflammation and can protect you from diseases such as heart disease, cancer, and diabetes. Cacao can also be used.
Liquid Sweetener: To add sweetness while keeping this high-protein mousse refined sugar-free, I recommend using a natural liquid sweetener like honey, maple syrup, agave, or date syrup.
Dark Chocolate: Yes, dark chocolate is good for you! The dark chocolate adds a deliciously indulgent chocolate casing which takes these healthy chocolate truffles to the next level. You can skip the chocolate if you prefer and roll the truffles in cocoa powder instead if you prefer.

- Blender or Food Processor: If not using smooth cottage cheese.
- Mixing Bowl: To mix the truffle mixture in.
- Small Bowl: To melt the dark chocolate in.
- Parchment Paper: To place the chocolate truffles on.
How to make healthy chocolate truffles
Here is a detailed summary of how to make this recipe. I’ve also included some photos, and you can find the recipe video in the recipe card. At the bottom of this page is a summarized version that can be printed.
Step One:
If you don’t have smooth cottage cheese, place your cottage cheese in a blender or food processor and blend until smooth.
Step Two:
Add your smooth cottage cheese, cocoa powder, and liquid sweetener to your mixing bowl and mix with a fork until fully combined.
Step Three:
Roll the mixture into balls – you can decide which size you want – I managed to get 10 truffles from the mixture but you can make smaller truffles and you’ll get more. If the mixture is too wet to roll into balls you can place the bowl in the fridge until it is more solid. You can also use damp hands to roll into balls.
Step Four:
Melt your chocolate – you can do this in the microwave, heating in 30-second intervals and stirring to prevent burning, or use a double boiler for more control.
Step Five:
Drop each truffle into your dark chocolate and use a fork to coat, then allow the excess chocolate to drip off before placing on a sheet of parchment paper on a baking tray, chopping board or plate.
Step Six:
Add some coarse salt or chopped nuts on top.
Step Seven:
Refrigerate until the chocolate shell has set and enjoy!
Tips & Notes for Perfect Healthy Chocolate Truffles
- Choosing Cottage Cheese: Smooth cottage cheese works best, as it blends well with the other ingredients. If you only have regular cottage cheese, blend it first for a creamy texture. Feel free to choose low-fat, medium-fat, or full-fat cottage cheese, depending on your nutrition goals.
- Rolling the Truffles: If the truffle mixture feels too soft or sticky, pop it in the fridge for 10–15 minutes. This will firm up the mixture, making it easier to roll into balls. Using damp hands also helps prevent sticking.
- Melting Dark Chocolate: When melting chocolate, do it in short 30-second bursts in the microwave or use a double boiler on the stove. Stir frequently to avoid overheating or burning the chocolate. If the chocolate is too thick for dipping, add a teaspoon of coconut oil for a smoother, glossier coating.
- Adding Toppings: For extra texture and flavor, sprinkle coarse sea salt, chopped nuts, or shredded coconut on top of the chocolate-coated truffles before they set. This adds a fun crunch and a touch of extra flavor.

Didn’t work for me. The consistency remained like a pudding. Tried adding more cocoa powder but it did not help. Ended up using it for parfaits which was nice anyway.
