There’s no denying that chocolate and strawberries are a match made in heaven. These brownies are a homage to the beautiful combination and I just know that you’re going to love them! It’s kind of like chocolate-dipped strawberries, but 100000 times elevated.

In my opinion, brownies should be super fudgy and slightly gooey – NEVER cakey. If you like cakey brownies, you are in the wrong place and you should go make my Chocolate Cake Recipe. OR, let me change your mind with these strawberry brownies.

I’ve created quite a few different brownie recipes in the past, and I swear they get better and better every time. This recipe is definitely my new favorite – I love the wholesome ingredients and the flavor and texture is just spot on. And then there’s also the addition of strawberries, because what sounds better than a brownie with strawberries? I really don’t know at this point.

These brownies are also incredibly easy to make, they’re made in one bowl and honestly, the hardest part about this recipe is waiting for the brownies to bake and cool.

Oh – and of course they’re secretly healthy! They’re made with oat flour instead of refined flour, coconut sugar instead of white or brown sugar, and they contain no butter or oil, yogurt is the secret ingredient to making these fudgy and delicious yet lower in fat. Oh – and then there’s the addition of strawberries, which are obviously also healthy!

I can’t hype these brownies up more than this, really. If you’re not sold on them yet, just make them and then thank me later!

Why These Strawberry Brownies Are Healthy

These strawberry brownies might taste indulgent, but they’re packed with wholesome ingredients that make them a healthy option compared to traditional brownies. Here’s what makes them secretly good for you:

  • Oat Flour: Unlike refined white flour, oat flour is packed with fiber and whole grains, which help with digestion and provide long-lasting energy. Oats are also naturally gluten-free, making these brownies suitable for those with gluten sensitivities.
  • No Butter or Oil: Traditional brownies often contain large amounts of butter or oil, adding unnecessary saturated fats. In this recipe, yogurt is the secret to keeping the brownies moist and fudgy while reducing the fat content. You can even use a plant-based yogurt to keep them dairy-free!
  • No Refined Sugar: The use of coconut sugar keeps these brownies refined sugar-free. Combined with the natural sweetness from the strawberries, you get a balanced sweetness without the sugar crash.
  • Strawberries: Fresh strawberries not only add a burst of flavor but also provide antioxidants, vitamin C, and fiber. They contribute to the overall nutrient content, making these brownies a more wholesome treat.

Oat Flour – Instead of using white flour, this recipe calls for oat flour or blended oats. You can buy oat flour from most health food stores, or you can make your own by blending and sifting whole oats.

Cocoa Powder – To add the chocolaty flavor to the brownies. You’ll see the recipe uses quite a lot of cocoa powder (almost a 1:1 ratio of cocoa to oat flour) – this is one of the tricks to making fudgy brownies instead of cakey brownies. I recommend using dutch processed cocoa powder as it provides a smoother and richer chocolate taste.

Yogurt – This adds moisture to the brownies without having to use butter or oil. I recommend using a thick yogurt like Greek or Double Cream Yogurt. You can use a dairy-free alternative to make these dairy-free.

Coconut Sugar – To add the perfect amount of sweetness to the brownie with strawberries, whilst keeping them refined sugar-free.

Milk – Brings the brownie batter to the correct consistency.

Eggs – You will need one whole egg and one egg yolk. This is what holds the brownies together.

Vanilla Extract – I always add vanilla to my sweet treats as it enhances the rest of the flavors.

Strawberries – Of course, you will need strawberries – I recommend using fresh strawberries as frozen strawberries may hold a lot of liquid which will affect the texture of the brownies. Most of the strawberries will be mashed and then mixed into the brownie batter – the rest will sit on top for presentation.

Ingredient Substitutions

If you need to make adjustments due to dietary restrictions or ingredient availability, here are some substitutions you can use:

  • Oat Flour: All-purpose or Plain Wholemeal Flour works perfectly. For gluten-free strawberry brownies, you can use almond flour or a gluten-free flour blend, but be aware this might slightly alter the texture.
  • Cocoa Powder: You can use cacao powder.
  • Yogurt: For a dairy-free option, use a thick, plant-based yogurt like coconut or almond yogurt. If you prefer not to use yogurt at all, you can try unsweetened applesauce or mashed banana, though this may change the flavor and texture a bit.
  • Coconut Sugar: If you don’t have coconut sugar, you can substitute with brown sugar, but this will make the brownies refined sugar and less healthy.
  • Milk: Any type of milk can be used, including almond, soy, or oat milk. For a richer texture, you can use full-fat milk, but adjust the batter consistency as needed.
  • Eggs: I’ve not tested any egg replacements like a flax or chia egg, but you could give it a go and let me know how they turn out! Alternatively you can make my Cherry Brownie recipe and use Strawberries instead of Cherries.
  • Vanilla Extract: If you don’t have vanilla extract, you can use almond extract for a different flavor twist or omit it altogether if needed.
  • Strawberries: You can substitute the mashed strawberries in the brownie batter with strawberry jam, however, I would recommend adding less sugar, otherwise your brownies may be too sweet.

How to make Strawberry Brownies

Here is a detailed summary of how to make this recipe. I’ve also included some photos, and you can find the recipe video in the recipe card. At the bottom of this page is a summarized version that can be printed.

Step One:
Preheat the oven and line your baking tin with parchment paper, leaving some paper overhanging the pan for easy removal.

Step Two:
Mash your strawberries with a fork and set aside.

Add yogurt, coconut sugar, egg and egg yolk, milk, and vanilla to a mixing bowl. Whisk until completely combined.

Step Four:
Add in your oat flour and cocoa powder and fold until almost combined.

Step Five:
Fold in your mashed strawberries. You can also fold in some dark chocolate chips or chunks.

Step Six:
Transfer the brownie batter to your baking tin.

Step Seven:
Slice a few strawberries and spread them out on top of the brownie batter – I slice my strawberries in half and then space them out evenly. You can also add some dark chocolate chips on top.

Step Eight:
Bake for 40-45 minutes depending on how fudgy you like your brownies. I do 40 minutes.

Step Nine:
Leave to cool completely in the tin before slicing with a sharp, clean knife.

Tips & Notes

  1. Measure Accurately: For the best results, use a digital food scale to weigh your ingredients, especially the oat flour and cocoa powder. Accurate measurements help achieve the perfect fudgy texture.
  2. Mashing the Strawberries: Mash most of the strawberries for a juicy, fruity flavor spread throughout the brownies. Reserve a few slices to decorate the top before baking.
  3. Dark Chocolate Chips: For extra indulgence, fold in some dark chocolate chips or chunks into the batter. You can also sprinkle some on top for that melted chocolate goodness after baking.
  4. Cool Completely Before Slicing: It may be tempting to dig in right away, but letting the brownies cool fully in the pan ensures they set properly. This makes slicing cleaner and prevents them from falling apart.
  5. Cut with a Clean Knife: When slicing your brownies, wipe your knife with a clean cloth or run it under warm water between cuts. This helps create neat, clean edges and prevents sticking.
  6. Customizing Texture: For extra gooey brownies, bake them for about 40 minutes. If you prefer a firmer texture, bake for closer to 45 minutes, but keep an eye on them so they don’t overbake.

Room Temperature: Store your brownie with strawberries in an airtight container at room temperature for up to 3 days. Be sure to keep them away from direct sunlight and heat to preserve their freshness.

Refrigerator: For longer storage, place the brownies in an airtight container and refrigerate them for up to 5 days. This will help keep them moist and fudgy.

Freezer: If you want to store them for an extended period, freeze the brownies! Wrap each brownie individually in plastic wrap or foil, then place them in a freezer-safe bag or container. They can be frozen for up to 2 months. To enjoy, simply thaw at room temperature for a few hours, or microwave for 15-20 seconds for a quick treat.
