Butter – You won’t need much, just enough to add a creamy texture to the cookie dough. Try to use grass-fed butter for extra health benefits. You could alternatively use coconut oil.
Liquid Sweetener – To add sweetness to the cookie dough and the filling whilst keeping these treats refined sugar-free. You can use honey, maple syrup, agave, date syrup, or anything along those lines. I use honey.
Black Coffee – To add a rich, irresistible coffee flavor to the cookie dough and help bring it to the correct consistency. I simply mix together 2 tablespoons of hot water with two tablespoons of instant coffee, but you could use a shot of espresso.
Oat Flour – Adds protein and fiber, making these treats super satiating. You can buy oat flour from most health food stores, or you can make your own oat flour by blending whole oats into a fine powder. To make your oat flour even finer you can sift the oat flour.
Cream Cheese – Used for the creamy filling. This adds protein and healthy fats. You can use low-fat, medium-fat, or full-fat, depending on your macro needs. You could also use mascarpone or smooth cottage cheese instead. For a dairy-free or vegan version, use a dairy-free cream cheese alternative.
Cocoa Powder – You’ll just need around a teaspoon for dusting on top.

How to make Tiramisu Cookie Dough Cups

Step One:
If you need to make your own oat flour, do this now. Blend whole oats into a fine powder using a blender or food processor. You can make the oat flour even finer by sifting it.
Step Two:
Add melted butter, liquid sweetener, and cooled coffee to a mixing bowl and whisk until fully combined.
Step Three:
Add in your oat flour and fold until combined. The mixture should resemble cookie dough, slightly sticky but mouldable. If the mixture is too wet add in some more oat flour, if the mixture is too dry add in some more coffee or warm water (one tablespoon at a time) until you reach the correct consistency.
Step Four:
Divide the mixture into six pieces then press each piece into your muffin tray. Press down and up the sides to create a “cup”. I like to use a spice bottle, shot glass, or my fingers to do this.
Step Five:
Make the creamy filling by combining cream cheese and liquid sweetener with a fork.
Step Six:
Divide the filling mixture between the cookie dough cups, filling them to the top.
Step Seven:
Dust some cocoa powder on top of each cup then refrigerate for a few minutes before removing.
