Drain the dates and transfer them to a blender along with 2-3 tablespoons of orange juice. Blend until a smooth puree is formed. Alternatively, use a fork if the dates are soft enough.
Step 2: Combine Ingredients for Brownie Cups
In a bowl, combine the date puree with nut butter and Food Thoughts Organic Cocoa Powder. Fold the mixture until well combined, creating a rich and fudgy brownie batter.
Step 3: Shape the Brownie Cups

Ingredients
For the Brownie Cups
- 120 g Pitted Dates around 6 Medjool dates / 1/2 cup
- 45 ml Orange Juice 3 tbsp
- 60 g Nut Butter 1/4 cup
- 60 g Food Thoughts Organic Cocoa Powder 1/2 cup
For the Chocolate Orange Ganache
- 120 g Food Thoughts Luxury Dark Chocolate Chips 2/3 cup
- 60 ml Orange Juice 1/4 cup
Instructions
- Add dates to a bowl and cover with boiling water. Set aside to soak for at least 10 minutes.
- Drain the dates, then add to a blender along with the orange juice and blend into a puree. You can also use a fork if your dates are soft enough.
- Add the puree to a bowl along with nut butter and Organic Cocoa Powder, and fold to combine.
- Divide the brownie mixture into 6 and press into a muffin tray (silicone works best). Press down and up the sides with your fingers or a shot glass to create a cup.
- For the filling, add your Dark Chocolate Chips to a bowl and melt in the microwave in short bursts or on a double boiler. Add the orange juice and mix until smooth.
