Ingredients

Let’s explore the ingredients that make these no-bake brownie cups not just tasty but also good for you!

Pitted Dates:

  • Packed with fibre, potassium, magnesium, and vitamin B6, dates add natural sweetness and provide an energy boost while aiding digestion and promoting heart health. Soft Medjool dates work best for easier blending.

Oranges:

  • Orange juice not only imparts a burst of citrusy flavour but also delivers a significant dose of vitamin C. Known for immune-boosting properties, vitamin C helps ward off winter sniffles, keeping your treat naturally sweet without refined sugars. You can use freshly squeezed orange juice or shop-bought orange juice, just make sure it’s 100% orange juice if possible.

Nut Butter:

  • Contributing a velvety texture and a wealth of nutritional benefits, nut butter is rich in plant-based proteins, healthy fats, vitamin E, and magnesium. Options like peanut butter, almond butter, or even sunflower seed butter cater to various preferences, including a nut-free version.

Food Thoughts Organic Cocoa Powder:

  • This superior-quality cocoa powder stands out for its heavenly chocolate flavour and rich antioxidants, promoting overall health by combating oxidative stress.

Food Thoughts Dark Chocolate Chips:

  • Elevating indulgence while delivering health benefits, these chips are rich in antioxidants, supporting heart health and potentially enhancing brain function.

How to Make Healthy Brownie Cups

I’ve added the step-by-step instructions below AND I’ve also got a video for you to follow along with.

Step 1: Prepare the Date Puree

Place pitted dates in a bowl and cover them with boiling water. Allow them to soak for at least 10 minutes to soften. Drain the dates and transfer them to a blender along with 2-3 tablespoons of orange juice. Blend until a smooth puree is formed. Alternatively, use a fork if the dates are soft enough.

Step 2: Combine Ingredients for Brownie Cups

In a bowl, combine the date puree with nut butter and Food Thoughts Organic Cocoa Powder. Fold the mixture until well combined, creating a rich and fudgy brownie batter.

Step 3: Shape the Brownie Cups

Divide the brownie mixture into six portions. Press each portion into a muffin tray, preferably silicone for easy removal. Use your fingers or a shot glass to press the mixture down and up the sides to create a cup shape.

Step 4: Create the Chocolate Orange Filling

In a separate bowl, melt Food Thoughts Dark Chocolate Chips either in the microwave in short bursts or using a double boiler. Stir until smooth. Incorporate 1/4 cup of orange juice into the melted chocolate, mixing thoroughly. This creates a velvety chocolate orange ganache.

Step 5: Fill the Brownie Cups

Divide the chocolate orange ganache evenly among the six brownie cups, ensuring each cup is generously filled. For an extra burst of flavour, add some orange zest on top.

Step 6: Set in the Fridge

Place the filled brownie cups in the refrigerator to allow the ganache to set. This typically takes a few hours or, for best results, let them chill overnight (good luck with that, though).

Step 7: Serve and Enjoy

Once set, remove the brownie cups from the fridge. Gently pop them out of the silicone tray and arrange on a serving plate. Optionally, garnish with additional orange zest for a decorative touch.

Extra Tips:

  • Ensure dates are adequately soaked for a smoother puree.
  • Silicone muffin trays work best for easy removal.
  • Experiment with different nut kinds of butter for varied flavours.
  • Allow the brownie cups to fully set for the best texture and taste.

How to Store No-Bake Brownie Cups:

Short-Term Storage (Up to 5 Days):

  • Refrigerate in an airtight container to preserve freshness.
  • Ensure a well-sealed container to prevent odours from affecting the flavour.
  • Keep away from high moisture areas.

Long-Term Storage (Beyond 5 Days):

  • Freeze in an airtight container with parchment paper between layers for up to 2-3 months.
  • Thaw gradually in the refrigerator overnight.

General Tips:

  • Avoid room temperature storage due to the ganache filling.
  • Place parchment paper between stacked brownie cups to prevent sticking.
